The Untempered Moment

Before tempering, chocolate is open, fruity, acidic and full of detail. It is the moment chocolate makers know, but most people never get to taste. CC/104 turns that moment into a new ritual: single-origin chocolate, finished fresh at home.

Specialty Chocolate.

Chocolate has a much larger flavor world than most people ever get to taste. Coffee had its third wave. Wine had its natural movement. Both changed how people think about origin, process, acidity, fermentation and preparation. A Riesling does not taste like Pinot Noir. Pinot Noir does not taste like Chardonnay. A natural wine does not taste like a polished industrial wine. A lightly roasted coffee does not taste like a dark roasted supermarket blend. The same is true for cacao. But chocolate is still often reduced to dark, milk, white, percentage, sweetness or added flavor. CC/104 starts from another idea: chocolate can become a specialty category of its own.

Better beans. Direct sourcing. Shorter, lower roasting. Closed stone grinding. Less smoothing. Less industrial correction. More fruit, more acidity, more origin, more detail.

The Triangle

The triangular pouch holds fresh untempered chocolate and turns packaging into function. It stores, portions, and dispenses the product in one gesture, making a fragile chocolate state practical for home use, tastings, and fine dining.

The Untempered Problem.

The strongest discovery was also the biggest challenge.

Before chocolate is tempered, it tastes different. Fresh from the machine, chocolate can be open, fruity, acidic and full of detail. It is the moment chocolate makers know well, but most people never get to taste. Untempered Chocolate keeps more of that freshness. But it does not behave like a finished bar. At room temperature, it becomes soft. Over time, it can turn grey, sandy and visually unstable. It loses the clean appearance people expect from chocolate.

That is why tempering exists. Tempering gives chocolate gloss, snap, stability and transportability. But tempering was not invented to make chocolate taste better. It was invented to make chocolate behave better. A chilled bar alone would not solve the problem. Even on the way home, it could soften. A normal package would not solve it either. Untempered Chocolate needed a new way to be prepared. Like freshly ground coffee, it had to become a home ritual. But with one advantage: once prepared, the finished pieces can be stored airtight in the freezer and eaten cold whenever needed.

Product System

Untempered chocolate only becomes relevant when it becomes usable. That meant designing more than a product. It meant building a system around preparation, portioning, freezing, storage, and tasting.

The triangular pouch holds the fresh untempered chocolate, a custom mold gives it shape, and the finished pieces can then be frozen, stored, plated, and served with ease.

Easy as brewing coffee

Untempered chocolate was never limited by flavor. It was limited by access. The triangle solves that problem by reducing the process to its essentials: warm gently, fill the mold, freeze, enjoy.

CHALLENGE

Untempered chocolate tastes better because it stays closer to the fresh, vibrant character of cacao. But that is exactly the problem. Chocolate is normally tempered to make it stable, shiny and shelf-ready. Without tempering, it can turn grey, sandy and unstable at room temperature. The challenge was to take this superior chocolate state and turn it into something people could actually buy, prepare and enjoy at home.

BIG IDEA

Third Wave Coffee changed how people think about coffee. Natural Wine changed how people think about wine. CC/104 followed the same direction for chocolate: a raw, pure moment built around untempered chocolate. The idea was to make this moment accessible through a new packaging system and turn it into a chocolate category that did not exist before.
